Tuesday - Friday from 6 PM - 8 PM we are offering our snack menu + a glass of sake for a price of whatever time it is you order.  So if it's 7:15 PM then it's 7.15 SGD for a glass of sake and the snack!  Add 3 SGD to it for an Asahi beer or Heineken too!

My personal favorite is the kawa ebi.  Deep-fried shrimp which goes really well with beer.

Frequently after looking at a restaurant menu, I think, “Well, a bunch of the stuff looks good but I don’t really know what to pick.”  However I don’t to take the effort of narrowing down exactly what I’m going to eat.

And that’s where Omakase (chef’s choice!) comes in.

You essentially leave it up to the chef to select what you’re going to eat.

At Standing Sushi Bar 8 Queen Street we are introducing a basic omakase for 29 SGD.  It comes with 6 selections as well as rice, salad, and miso soup.  The chefs will be changing this on a weekly basis so the picture above is just an illustration.  Expect fish from our sushi bar, some items from our robatayaki counter, and then offerings from our kitchen.

Tea Set at Marina Bay Link Mall

Raffles Place has a lot of quirks when it comes to having a restaurant there.  From 12 PM – 1:30 PM it’s a sea of people… literally foaming at the mouth, flowing through the hallway and flooding the restaurants in the area.  After 1:30 PM the people quickly recede back to their offices and it’s a slow drip until 6:00 PM when people start dropping in for dinner.

Since it’s the business district, people need tea breaks and places to hold chats; I figured we should offer a tea time special for the Raffles Place crowd that is looking for something different from the coffee and cakes.

You know how there is something that you know you should do but you just never get around to doing it?  For me, creating a mailing list is one of those things.

With a location in Raffles Place, there’s high foot traffic and a strong likelihood of people dropping their name card into a fishbowl for me to add to the list.

With a mailing list I can contact interested diners directly and not rely on the whims of the Facebook notification system to provide updates.

It pays to be kind

I admit I’m addicted to the Singapore Seen section on Stomp. While they bill it as a lofty site for citizen journalism, it has turned into a portal showing the ugly side of us all living together on this tiny island.

Public transportation woes, maid troubles, anti-foreigner diatribes, aaaggghhh!

Is this country really debating whether an able-bodied person should let an elderly or pregnant commuter take the priority seat on public transportation?  Isn’t the answer obviously “OF COURSE?”

The government has run campaigns to encourage kindness and graciousness. I’m not sure what the results have been, but it seems many folks are motivated to take action only if there is a concrete payoff.

So us here at Standing Sushi Bar are taking our sushi sensibilities and wading into the teeming, seething mass that is the Singapore public.  Our goal?  Encourage people to be kind – it will make Singapore more pleasant for all!

Election fever has gripped Singapore, and the candidates getting the most attention are Tin Pei Ling from the People’s Action Party and Nicole Seah from the National Solidarity Party.

I don’t know about you, but whenever I meet someone new, I wonder what they would be like if they were a sushi roll.

I gathered available information about the two candidates and then gave my interpretation to the sushi chefs for them to create an actual roll.  Isn’t it convenient to own a Japanese restaurant?

It’s go time

Marketing and promotion is an area that I haven’t spent much time on. Since the beginning of Standing Sushi Bar (a little over a year ago), I’ve been focused on daily operations and simply learning about the F&B industry. Having the first branch in Raffles Place meant that I didn’t have to do too much outreach – there are so many people in the area that promotions didn’t have to span far.

The 8QSAM branch is in a radically different situation. While I love the Bras Basah neighborhood (I’m a long-time resident), there are lots of people who have no idea this area exists… even though it’s just a couple blocks from City Hall MRT! For the past few years it seemed like a no-man’s land. While it was a central location there was nothing that drew a critical mass of people.

Earlier this year I noticed a lot more activity – the old Catholic High building underwent renovation and has become an arts & dance enclave, the Food for Thought café (hi neighbor!) opened up at 8QSAM, and Bras Basah MRT station began operating. CNNGO talks about the transformation of the area.

I feel SSB at 8Q has opened up as the neighborhood is on the cusp of becoming a destination location.

On the cusp, full of potential, etc. – all great… but potential and the future do not count for nuts when it comes to the present.

Standing Sushi Bar also opened (2 weeks ago) at Marina Bay Link Mall. Great location, again full of potential. When the office towers are complete and everyone has moved in, there are supposed to be more workers there than Suntec City. That’s a huge, captive lunch crowd waiting to be fed good sushi!

But… people are just beginning to move into Marina Bay Financial Centre. Essentially it’s a bunch of empty futuristic-looking glass skyscrapers waiting for the thrum of human activity to commence.

Now that these branches are open, it’s time to shift gears and think about how to spread the word of Standing Sushi Bar. Promote! Promote! Promote!  I have to get into that mindset.

Standing Sushi Bar 8QSAM – Opening Sep 27

Finally! Standing Sushi Bar at 8QSAM is opening this Monday, September 27. It’s a much bigger space than the existing One Raffles Place branch and with that additional space we have put in a full sake bar, a robatayaki counter, sushi bar, and a large kitchen. That means an expanded menu!

In honor of my 7th year living in Singapore, Standing Sushi Bar is going to celebrate by having a salmon festival for the rest of the Saturdays in March!

On Saturdays in March, come to Standing Sushi Bar and enjoy 1 for 1 salmon sushi and sashimi.  If you order 1 piece of salmon nigiri, you get an additional salmon nigiri free!  Order a serving of salmon sashimi?  Get another serving free!  Cheers for salmon!

To enjoy the salmon promotion, please tell the staff while ordering or when you’re at the register.  Reason being I want to see whether promotions such as this actually bring folks to the restaurant on an odd day like Saturday.

What’s the deal with bank credit card promotions?

Credit card promotions at restaurants are rife in Singapore. I never noticed such promotions in the US, but here every restaurant has a tie-up with a bank where users of that bank’s credit card will get some type of benefit – be it a percentage off the bill, free food based on a certain amount you spend, 1 for 1 deals, etc.

Before Standing Sushi Bar even opened, banks were approaching to talk about tie-ups. I wish I had known more about how to deal with them.

Their value proposition is that they will increase awareness of your restaurant by including the restaurant in their collateral - primarily booklets and web sites that list all the venues that have deals with them and what the promotion is.

Since I was a soon-to-open restaurant, I figured that any awareness would be good.  UOB is the bank best known for their restaurant tie-ups so when they approached me I signed on – offering discounts and a 1 for 1 omakase promotion to stimulate the dinner crowd.

The 1 for 1 omakase promotion was popular.  It helped bring new people to the restaurant that would normally not eat dinner in the Raffles Place area.  However a 1 for 1 promotion is hard to stomach, financially.

One of the awareness vehicles that the banks tout is that they will create banners and table tents with the credit card promotion that you’re supposed to place all over the restaurant.  They pitch this to you as if it’s a good thing.

To me, a bank / credit card promotion should bring in customers from outside the immediate area. One of the advantages of a restaurant in Raffles Place is that the foot traffic is incredible – people will discover you and try you out regardless of promotions.

So a promotion should convince people that aren’t in the Raffles Place area to venture into the CBD and try out the restaurant.  If a customer is already in the restaurant and has come of their own accord, the bank tie-up hasn’t contributed anything but the customer still gets the discount and then the restaurant makes less money without getting the benefit of the increased awareness by the bank promotion.

Tips on dealing with the banks:

- ASK FOR COMPENSATION

As a restaurant owner you’re losing money with every discount that you give. The bank is trying to increase the amount of times a customer will use their credit card (thus putting money into the bank’s pocket) by your restaurant’s promotion.

When negotiating with the bank, they should give you something tangible in return.  While there is value in being included with their collateral and advertisements, you need to ask for money, subsidy, or an actual item.  For example you could say to the bank, “I will do this 1 for 1 promotion with you if you subsidize the promotion by giving us 2,000 SGD.

- TIE UP WITH THE BANK THAT PROCESSES YOUR CREDIT CARDS

You may be paying 2.5% of the total bill for every Visa transaction.  If you partner with the bank that handles your credit card transactions they may be able to adjust the percentage rate to something lower.

- SET DEADLINES ON THE PROMOTIONS

Open-ended promotions are confusing for everyone. Make it clear when promotions will expire.

- EXAMINE THE BANK’S CUSTOMER DEMOGRAPHICS

Ask for the demographics of the bank’s credit card holders. Are they the right market for your restaurant? If a bank’s credit card is popular with students and you’re targeting professionals, you’re not going to want to promote to that bank’s credit card base.

- MEET WITH A FEW BANKS BEFORE COMMITTING

In the opening weeks, a flood of banks will meet with you and try to sign you to exclusive (i.e. can only sign with them or must give them the best deal) contracts.  Make sure you’re getting a good deal from the bank (i.e. what they will subsidize) before committing. 

- TARGET YOUR PROMOTION

Wait a couple weeks and see where you think you need help. For example, at the sushi bar we get a healthy lunch crowd – there’s no need for me to run a promotion to increase customers during lunch time. However we get few customers during the late afternoon and happy hour times. So with Standard Chartered I created a promotion that targets the happy hour crowd.

 

Christmas Eve Dinner Omakase

Did you know Santa Claus is a huge fan of Japanese food?  Particularly sushi! After a night of whizzing around in a sleigh pulled by reindeer, there’s nothing he likes more than knocking back a glass of sake and slipping sashimi into his mouth. All the protein is what keeps him going!*

While the sleigh bells are ringing, the kids are a-sleeping, and Raffles Place will be as quiet as a mouse, Standing Sushi Bar is going to be open for a special Christmas Eve Dinner Omakase.

We're going all out to attract Santa to the sushi bar.  Forget milk and cookies, it's time for a multi-course omakase to celebrate Christmas.
